Canada Goose Jerky

If you enjoy mixing up your cooking methods of wild meat, then check out this jerky recipe. Whether you're out in the duck blind or looking for a unique way to enjoy the meat, Canadian Goose Jerky is a perfect choice - packed with protein, making it a healthy and delicious snack with a long shelf life. Ingredients
Salt 4 tbsp (2 tbsp at 2 different steps)
Brown sugar 3 tbsp
Water 2 cups
Soy sauce 1 tsp
Worcestershire sauce 3 tbsp
Garlic powder 1 tsp
Chile powder 1/2 tsp
Black pepper 1 tbsp
Red pepper flakes 1 tsp
Thyme 1/2 tsp
Instacure #1 1/2 tsp
1 goose = 2 goose breast
Directions
Salt marinade:
1. Add your full breast to a bag or bowl that can be sealed
2. Add water to cover
3. Add 2 tbsp of salt
4. Leave in fridge for 12-24 hrs
Flavour town marinade:
1. Remove breast from salt brine and discard the brine
2. Slice in thin slices, to your preference. Typically, 1/4" is a good start
3. Add sliced goose breast to a bag or bowl
4. Add all of the ingredients above to the goose (2 tbsp of salt)
5. Leave goose brine for 24-36 hrs in the fridge, shaking every so often to ensure a good coating
Cooking
We're approaching the best part!
You can either cook this at your dehydrator's recommended temperature. Now, jerky does tend to have personal preference. So, we recommend cooking at 140f-150f for 6-8 hrs. Checking around the 6 hr mark to see how it's looking until you reach your desired texture.
